Sauces, Carmel, Chocolate, Fudge

No Fail Caramel Sauce

2 cups light brown sugar, packed
6 tablespoons unsalted butter
2 cups heavy cream
2 tablespoons vanilla

Combine ingredients in a medium saucepan over medium heat whisking occasionally.  Cook for about 5 minutes, remove from heat and add vanilla.  Whisk to combine and return to heat for another minute until thickened.

Serve and enjoy!  You can also store in the refrigerator in a resealable container.

Homemade Chocolate Syrup
makes about 2 1/2 cups

¾ cup light brown sugar
¾ cup granulated sugar
1 cup Hershey’s unsweetened cocoa powder (in the baking aisle)
1 cup cold water
¼ teaspoon kosher salt
1 tablespoon vanilla extract

In a cold medium saucepan whisk together salt, sugars and cocoa until they are combined and there are no lumps. Add water and whisk to combine.  Turn heat to medium and bring a boil, whisking frequently.

Reduce the heat to medium-low whisking occasionally.  Allow the mixture to simmer until it has slightly reduced and thickened. Remove from the heat and stir in vanilla.  Pour into a mason jar and allow to come to room temperature.  Cover and refrigerate.

Homemade Double Chocolate Hot Fudge Sauce

½ cup granulated sugar
1 ½ cups heavy cream
2 tablespoons light corn syrup (or brown rice syrup)
8 ounces milk chocolate chips (or your favorite flavor)
2 tablespoons unsalted butter
2 teaspoons vanilla extract

Add all ingredients (except vanilla) to a medium pot over medium heat.  Whisk to combine.  Bring to a low boil (bubble) until hot fudge thickens enough to look like fudge, whisking constantly.  About 5 minutes.

Remove from heat, add vanilla.  Whisk to combine.  Allow to cool and transfer to a resealable glass jar or serve right away.  Keep refrigerated and reheat as necessary.

Homemade carpet shampoo and febreze

✿✿ CARPET SHAMPOO SOLUTION ✿✿
1 Cup Oxyclean*
1 Cup Febreeze*
1 Cup Distilled White Vinegar
*This homemade version works fabulously!
Pour contents into shampooer tank and mix with hot water to fill tank completely. This will not only clean your carpets it will also deodorize. It will smell slightly of vinegar until the carpet is dry, then will smell like febreeze...
Be sure to test spot with the solution just to be safe, however this should be safe for ALL carpets.
*Note: The amounts in this recipe are for a large professional carpet cleaner. For a small home carpet cleaner, cut the amounts down to 1/4 cup of each.
~To save even more $$$ make your own Febreeze too! For just $0.15 a Bottle! Here is the Recipe...
✿✿ Homemade Febreze ✿✿
What you'll need:
1/8 Cup of fabric softener (I used Downy April Fresh)
2 tablespoons Baking Soda
Hot tap water
Spray bottle (I used my empty 27 oz. Febreze bottle)
Preparation:
Using a funnel, pour fabric softener and baking soda into your spray bottle. Fill spray bottle with hot tap water and shake well. Don't forget to twist the nozzle over to the LOCK position if you're using a Febreze bottle.

Chicken and Dumplins

1 whole chicken cut up
splash of oil
2 stalks celery, diced
1 can peas
3 carrots chopped
1 large sweet onion, diced
1 can cream of chicken soup
1 tsp salt
2 TBS PARSLEY
1 tsp tsp pepper
2 cans chicken broth (14oz)each
DUMPLINGS
1-1/2 cup all-purpose flour
1 teaspoon poultry seasoning OR CHICKEN BOULLION POWDER
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1 EGG
BOIL CHICKEN ,veggies, IN WATER TIL DONE, REMOVE CHICKEN FROM POT AND REMOVE BONES. ADD BACK TO THE STOCK, ADD CREAM OF CHICKEN SOUP AND BROTH (MAY NEED TO ADD A BIT MORE WATER ) ADD SALT AND PEPPER TO TASTE
DUMPLINGS
MIX FLOUR, SEASONING, SODA,EGG, SALT AND BUTTERMILK TIL YOU GET YOUR DOUGH, DROP IN SPOONFULLS INTO THE BROTH, CONTINUE TO COOK UNTIL DUMPLINGS ARE DONE AND ENJOY.

Queen of Clean Window Cleaner


We are back to the window cleaning today. This time, spray on window cleaners for outside or inside. I find the spray window cleaners outside are good for a couple of windows, but for all the windows, the cornstarch and water recipe I gave you already is the best. Here are two spray cleaners.
Easy Window Cleaner
50% Rubbing Alcohol 
50% Water
Put in a spray bottle and shake. Label the bottle. For windows, spray on. For mirrors, spray your cloth or paper towel and then clean the mirror. Buff and you are done.
This next one is my favorite spray window clearner
Cornstarch Window Spray
1/4 c. White Vinegar
1/4 c. Rubbing Alcohol
1 Tbsp Cornstarch
2 c. warm water
Shake this really well to combine. Measure the ingredients. Too much cornstarch will clog your sprayer.
Label the bottle. Before each use, give it as good shake. Spray on and wipe off. For mirrors, again, spray yoru paper towel or cloth, do not spray the mirror.

After School Snack

3 Ingredient No Bake Peanut Butter Bars
Your kids will love these! I love how quickly they come together! Only 3 ingredients..
Ingredients:
peanut butter - 1 cup
honey - 1 cup
old fashioned oatmeal - 3 cups
Instructions:
Put peanut butter and honey in a heavy saucepan and heat on low until thoroughly combined and becomes a liquid consistency.
Mix in oats and stir.
Press into a 9 x 9 inch pan.
Cover and let set overnight.

Two Ingredient Fudge

2 Ingredient Strawberry Fudge
Ingredients
  • 1 16oz Strawberry Frosting
  • 1 12 oz bag White Chocolate
  • Heart shape decorations (
Instructions
  1. Line 9x9 pan with parchment paper or tin foil.
  2. In a small bowl, microwave candy melts on medium at 30 second intervals. Stir and repeat until smooth! Add in frosting and stir until combined.
  3. Pour mixture into prepared pan and spread smooth (you can add sprinkles on top if desired). Refrigerate until completely set. In this size pan, the fudge pieces are about 5/8" thick. If you want thicker, make a double batch.
  4. Store in the fridge up to 10 days.

Iron Skillet Apple Pie

RECIPE: IRON SKILLET APPLE PIE
1 stick, plus 1 TBS butter
1 c brown sugar (can be cut in half)
1 c white sugar (can be cut in half)
1tsp cinnamon
½ tsp nutmeg
4 c Granny Smith Apples, peeled and chopped into small pieces
1 box refrigerator piecrust (or homemade)
In large iron skillet, melt 1 stick of butter and 1 cup brown sugar (do not caramelize, just melt the two together). Cover with piecrust; add apples, ¾ c white sugar, cinnamon and nutmeg. Cover with top crust that has been slit in 3-4 places (I always cut a heart shape, feel free to choose your own cutout). Sprinkle top with remaining ¼ cup of sugar and dot with remaining TBS of butter.
Bake in 350-degree oven, for 30-45 minutes or until crust is brown and apples are tender.

Mexican Spaghetti

Mexican Chicken Spaghetti. Seriously sent from heaven!!
Ingredients
1 lb boneless, skinless chicken breasts
1 lb velveeta cheese, regular or mexican
1 can(s) rotel tomatoes, regular or hot
1 lb spaghetti pasta
1 stick butter
1 can(s) cream of chicken soup, undiluted
1 can(s) cream of mushroom soup, undiluted
1 medium onion, chopped
1 bell pepper, red or green, chopped
salt and pepper to taste
1 Boil chicken breasts in a large pot adding 1/2 teaspoon of salt and 1/2 teaspoon of black pepper to water.
2 Remove chicken when completely done, about 10 to 12 minutes.
3 Boil spaghetti pasta in remaining broth according to package directions. Drain pasta after done and discard water. Set aside the pasta...Do not rinse.
4 Melt the butter in that same (empty) pot and saute the onion and bell pepper.
5 Add tomatoes, soup, cooked chicken (cut into bite-size pieces) and spaghetti to the sauteed onion mixture, one at a time, and gently mix together.
6 Add cheese and stir together, mixing well. Add salt and pepper to taste.
7 Heat until cheese is melted thoroughly, stirring occasionally to keep from scorching.
8 SERVING SUGGESTIONS: Garnish with freshly grated Parmesan cheese and serve with a salad and hot garlic bread.

Fried Rice

BETTER-THAN-TAKEOUT-FRIED-RICE
Serves: 5-6
Ingredients
•4 cups rice, prepared (use brown rice)
•½ pound boneless, skinless chicken breasts, cooked or shrimp cooked
•1 cup peas & carrots, frozen
•1 white onion, chopped
•2 cloves garlic, minced
•2 eggs
•3 tablespoons sesame oil
•¼ cup soy sauce
Instructions
1.Prepare rice according to package instructions to yield 4 cups cooked rice.
2.Heat sesame oil in a large skillet on medium heat.
3.Add onion, garlic, peas, and carrots. Stir fry until tender.
4.Crack eggs into pan and scramble, mixing throughout vegetables.
5.Add rice, chicken, and soy sauce to pan. Stir in soy sauce and remove from heat.

Mexican Lasagna

Mexican Lasagna
Ingredients
12 ounces cooked chicken, cut into 1-inch cubes ( about 3 cups)
1 cup sour cream ( regular or low-fat)
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
1/2 cup salsa ( mild, medium or hot)
1 (4 ounce) cans chopped green chilies
1 teaspoon ground chili powder
1/4 teaspoon cayenne pepper
8 flour tortillas, cut in half
Directions
Preheat oven to 350 degrees F.
Coat a square baking pan with cooking spray.
In a large bowl, combine chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, chili powder, and cayenne pepper. Mix well and set aside.
Arrange half of the tortilla pieces in the bottom of prepared pan, overlapping pieces slightly to cover the surface. Top with half of the chicken mixture and smooth over with the back of a spoon to even the top. Layer remaining tortillas over top, and spoon over remaining chicken mixture. Top with remaining 1/4 cup each of Monterey Jack and cheddar cheeses.
Cover with foil and bake 30 minutes. Uncover and bake 30 more minutes, until top is golden and bubbly. Let stand 5 minutes before serving.

Snickerdood;e Bread


Snickerdoodle bread
2½ cups flour
2 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon
1 cup butter softened
2 cups sugar
3 eggs
1 tsp. vanilla
¾ cup sour cream
1 pkg. Hershey's cinnamon chips
3 TB sugar
3 tsp. cinnamon
Directions
Cream butter, sugar, salt and cinnamon until fluffy. Add eggs and mix well. Add vanilla and sour cream and mix well. Mix flour and baking powder in a separate bowl. Add to wet ingredients and mix until all combined. Add cinnamon chips and stir into batter. Set aside. Spoon batter into 4 mini loaf pans until about 2/3 full. Mix 3 T. sugar and 3 t. cinnamon in a bowl and sprinkle over the batter in each loaf pan. Bake at 350 for 35-38 minutes. Let cool before removing from pan

House window cleaner


The sun is shining here in Arizona and in some parts of the country, fall is in the air. Let’s wash the outside windows! Here’s how:
MIX:
2 quarts warm water
½ cup cornstarch
Wash with a sponge – I prefer a natural one
Do not rinse!
Buff dry for a brilliant shine.
BONUS: The starch helps to repel the dust!

Chocolate pudding cake

TOTAL TIME: Prep: 1-1/4 hours + chilling Bake: 35 min. + cooling MAKES: 8 servings
Ingredients
PUDDING:
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1-1/2 cups whole milk
3 ounces semisweet chocolate, chopped
1 teaspoon Pure Vanilla Extract
CAKE:
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cubed
3/4 cup Dutch-processed cocoa
1 cup sugar
1 cup packed brown sugar
1 cup buttermilk
1 cup strong brewed coffee
1 teaspoon Pure Vanilla Extract
2 eggs
FROSTING:
8 ounces semisweet chocolate, chopped
1/2 cup unsalted butter, cubed
1/3 cup hot water
2 teaspoons light corn syrup
2 teaspoons Pure Vanilla Extract

Single serve cake

Great for when you just want a little bit!! Easy!!!
3-2-1 Cake!!
1 box Angel Food cake mix
1 box any other flavor cake mix, whatever you like!
Pour both boxes of cake mix into a large zip lock bag, one of the flavors MUST be Angel Food . Close bag and shake until the two cake mixes are well combined.
When you're ready to make your personal size cake, mix 3 Tablespoons of your cake mix and 2 Tablespoons of water in a microwavable bowl or mug. Microwave on high for 1 minute. Let cool or serve warm and top with whatever you like. That's it!! 3-2-1 Cake

KFC Original Recipe

Warning....I am just sharing! Save to you wall ASAP as I will never post again.
KFC Original Recipe Chicken ...... HMMMMMM
11 Herbs and spices...... Enjoy.
1 whole chicken, cut into pieces
3 beaten eggs
4 tablespoons oil
For the coating
2 cups flour
4 teaspoons paprika
2 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon tarragon
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/2 teaspoon celery salt
*optional add keptchup to mix
Directions:
1. Sift together all the coating ingredients and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.
2. Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

Pound Cake


Judy's Famous Pound Cake
Ingredients
6 eggs
1 cup butter (2 sticks)
3 cups sugar
3 cups all purpose flour
1 cup whipping cream (also known as Heavy Cream)
1 teaspoon vanilla
Instructions
Grease and flour tube (or bundt) pan and set out eggs and butter to allow them to come to room temperature.
In a large bowl, cream the butter and sugar until smooth. Add the eggs, one at a time, beating for one minute after each addition. Sift the flour and add it to the creamed mixture alternately with the whipping cream. Mix until fully incorporated.
Stir in the vanilla.
Pour into prepared pan and place in a cold oven. Turn the oven to 300 and bake for 80-90 minutes, until a toothpick inserted in the center comes out clean. Cool completely before removing from pan.

Microwave Fudge

TWO-MINUTE MICROWAVE FUDGE, delicious!
Ingredients
1 lb powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla
1/2 cup butter or 1/2 cup margarine
1/2 cup chopped nuts (optional)
Directions
Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl.
Stir in milk and vanilla.
Mix well.
Place butter on top.
Microwave on high, 2 minutes.
Beat with wooden spoon until smooth.
Stir in nuts (OPTIONAL).
Spread in 8 X 8 X 2 inch baking pan.
Chill about 1 hour or until firm.
Cut into pieces.

Root Beer Float Cake

Root Beer Float Cake
Ingredients:
1 package of white cake mix
1 3/4 cup of root beer divided
1/4 cup of canola oil
2 eggs
1 envelope of powdered whipped topping mix
(I used Dream Whip)
Directions:
In a large bowl or mixer combine cake mix, 1 1/4 cups of root beer, oil and eggs. Beat on low speed for 2 minutes or you can mix ingredients by hand for 3 minutes.
Pour into a greased 13x9 baking pan. Bake at 350 for 30 to 35 minutes or until toothpick comes out clean. Cool completely before icing.
For your icing combine the remaining 1/2 cups of root beer with the whipped topping mix. Beat on high until soft peaks form. Ice cake and store in fridge.
And yes you can definitely taste the root beer in this-it's so yummy!!

Bacon Wrapped Chicken

Bacon Wrapped Chicken
3 Boneless chicken breast
9 slices of bacon
brown sugar (about 1/4 cup on a plate)
Rub: May need to double if using more chicken
1 tsp. garlic powder
1 tsp. paprika
1 tsp. chili powder
1 tsp. pepper
1 tsp. brown sugar
pinch of salt
Cut each breast into 3 strips. Combine rub ingredients and roll each strip in rub. Wrap each strip with bacon and roll in brown sugar. Bake in a 375 degree oven for 20-25 minutes or until bacon is crisp and chicken is 160 degrees


Chocolate Mayo Cake with Peanut Butter Frosting

CHOCOLATE MAYO CAKE WITH PEANUT BUTTER FROSTING
Melt in your mouth!!!! Super moist!!!!
CAKE:
•2 cups all-purpose Flour
•2/3 cups unsweetened cocoa powder
~I prefer Ghirardelli Cocoa, it tastes heavenly...
•1 1/4 teaspoon baking soda
•1/4 teaspoon baking powder
•3 eggs
•1 2/3 cups sugar
•1 teaspoon vanilla
•1 cup Mayonnaise (can be Light Mayo)
•1 1/3 cups water
Mix all wet items first in a mixing bowl till well blended. Add all dry items except the flour and cocoa. Once well blended, add the flour and cocoa a little at a time. Once it is well blended, pour batter into a greased (and floured?) baking pan and bake at 350° for 30 minutes and/or a toothpick comes out clean. Cool cake completely before frosting.
FROSTING:
•3 cups powdered sugar
•1/3 cup peanut butter
•1 1/2 teaspoons vanilla
Cream together peanut butter and vanilla. Then slowly add sugar till well blended. If too thin, add more sugar. If too thick, add (about a tablespoon at a time) of peanut butter till it is creamy. Spread over cool cake. (Heat frosting in the microwave for a few seconds for easier spreading, or heat on low on your stovetop if you're opposed to microwaves

No water window Cleaner

TOUGH JOB WINDOW CLEANER
This one is for those windows that are a mess. They have screen stains, bug stains, they are extra dirty. This is also awesome for the outside windshield on the car. It will remove that greasy road film and clean the windshield so it is streak-free.
THERE IS NO WATER IN THIS SOLUTION!
1 Pint Rubbing Alcohol (prefer 70%)
2 Tablespoons liquid dish soap
2 Tablespoons Ammonia
Combine in a small bucket and apply with a scrubbing sponge suitable for glass. Rinse off and dry.
You can make this up in larger batches if needed. Wear gloves when applying so it doesn't dry your hands out. Look for large containers of alcohol at the $$$ store.
