KFC ORIGINAL SECRET CHICKEN RECIPE

This goes great with the KFC Cole Slaw Recipe I just posted!

Ingredients
1 whole chicken, cut into pieces
3 beaten eggs
4 tablespoons oil

For the coating

2 cups flour
4 teaspoons paprika
1 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning (or chicken stock powder)
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon parsley
1/2 teaspoon thyme
1 teaspoon chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt

Directions:

Sift flour and add together all the coating ingredients and grind finely with a mortar and pestle and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.

Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

Easy Mexican Casserole
1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
sour cream and salsa for serving

Preheat oven to 325 degrees. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through.

Grease a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly.

Let sit for 5-10 minutes before serving. Top with sour cream and salsa.

Ingredients:

1 (3 ounce) package sugar-free lemon gelatin
2 tablespoons lemon juice
2 (8 ounce) packages low-fat cream cheese
1 cup boiling water
Directions:

1. Stir the boiling water into the box of jello, mixing for about 2 minute.

dd the cream cheese and lemon juice.

3. 
Mix until all lumps have disappeared.

4 Pour into an 8" square pan and chill until set.

Cut into 8 squares.

Ingredients

can (20 oz) sliced pineapple, drained, juice reserved

box Betty Crocker® SuperMoist® yellow cake mix
1/2
cup vegetable oil

cup butter, melted

cup packed brown sugar

maraschino cherries, cut in half

Directions

  • 1Heat oven to 350°F. Spray 24 regular-size muffin cups with cooking spray.
  • 2Cut each pineapple slice into 4 pieces; set aside. In large bowl, beat cake mix, oil, eggs and reserved pineapple juice with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally.
  • 3In small bowl, stir together melted butter and brown sugar. Spoon 1 1/2 teaspoons butter mixture into each muffin cup. Top each with 2 pineapple pieces. Place cherry half, cut side up, in center of pineapple pieces. Spoon 1/4 cup batter into each cup.
  • 4Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Run knife around edge of cupcakes to loosen; invert onto cookie sheet. Serve warm.

    Expert Tips

    You can use crushed pineapple instead of the pineapple rings. Just divide the pineapple evenly among the muffin cups.
    White cake mix can be substituted for yellow, if desired.

    Ingredients

    2Tbsp salted butter
    ¼cup packed light-brown sugar
    1large egg
    ¼tsp vanilla extract
    2Tbsp cocoa powder
    ¼cup all-purpose flour
    1pinch baking powder
    1pinch salt
    3Tbsp chocolate chips (I used half milk chocolate & half semi-sweet)
    For Microwave Brownie Sundaes:
    Serve with ice cream (cookies and cream, vanilla bean, chocolate or caramel)
    Drizzle with chocolate sauce or caramel sauce and sprinkle with sea salt, if desired


    Directions
    Add butter and brown sugar to a 12 oz (or larger mug). Heat in microwave on HIGH power 45 seconds, then remove from microwave and stir mixture with a fork. Mix in egg and vanilla extract. Stir in cocoa powder. Add flour, baking powder and salt and stir until well combine. Mix in chocolate chips. Set microwave on 50% power and cook mixture 1 minute 50 seconds - 2 minutes 30 seconds (time will vary based on varying microwaves wattage, don't overcook or it may result in a tough brownie). Serve warm topped with ice cream and chocolate sauce or caramel sauce and sea salt, if desired.

    Salted Caramel Pretzel Brownies

    Here is what you need:
    3 cups mini pretzels
    4 tablespoons melted better
    1 box brownie mix
    2 eggs (per the box directions)
    vegetable oil
    water
    3/4 cup dark chocolate chips
    1 jar oh-so-easy crockpot caramel or store-bought caramel sauce
    salt
    cooking spray

    Step 1:  Place pretzels in a gallon sized Ziploc bag and crush as finely as possible with rolling pin.

    Step 2: Mix brownie mix with water, eggs, & oil per the box instructions.  Add dark chocolate chips.

    Step 3: Spread pretzel crumbs out on bottom of  9×13″ baking pan.  Drizzle with butter and mix well until pretzels are coated, then press into a crust on bottom of pan.

    Step 4:  Carefully pour brownie batter evenly over pretzels crust

    Step 5:  Carefully drizzle caramel over brownie batter in zig-zag motion, as shown.

    Step 6:  Pull a knife through the caramel in alternating directions to create a pretty pattern.  Sprinkle with salt.

    Step 7:  Bake at 350 degrees for approximately 25 minutes.  (Check box directions for baking time.) Remove brownies from oven and let cool slightly.  While brownies are still warm, cut into squares with plastic knife.

    Step 9:  Let cool completely, then serve.  Mmmmmmmmm…….
    Salted Caramel Pretzel Crust Brownies.  Oh my goodness, these might be the best brownies on earth!  So easy to throw together using boxed brownie mix!

    Hawaiian Delite Cake --ONLY 2 INGREDIENTS!!!



    One box Angel Food cake mix and 1 can approx 20 oz crushed pineapple, do not drain...add juice and all. 
    Mix by hand in a large bowl, it foams up a lot. 
    Heat oven to 350*, lightly spray a 9x13 cake pan and bake for about 30 minutes. That's it!
