New Years Eve is almost upon us. Everytime we had a party in our family we asked my cousin Charlene (I called her Chi Chi because as a baby I couldn't say Charlene) to bring the Guacamole. Her dip was fabulous. Even though she is gone her fame lives on and I make her dip for parties all the time.
CHI CHI's GUACAMOLE
4 ripe avocados, mashed or pureed (can do it in a food processor) 1/2 cup canned diced green chilies (your heat preference) 1/4 cup minced onion 1 Tablespoon salt 1/4 cup lemon juice
Combine all ingredients, cover and chill. Serve with corn chips. Makes about 3 cups.
