Microwave Fudge




Directions



  1. Grease a 9x9 inch dish.
  2. In a microwave safe bowl, stir together confectioners' sugar and cocoa. Pour milk over mixture and place butter in bowl. Do not mix. Microwave until butter is melted, 2 minutes. Stir in vanilla and stir vigorously until smooth. Pour into prepared dish.
  3. Chill in freezer 10 minutes before cutting into squares

"Lazy Man's" Pie- Peach Cobbler
1 stick butter
1 C. milk
1 C. sugar
1 C. flour
1 tsp. baking powder
Dash of salt
1 qt. fruit, sweetened (peaches, cherries, blackberries, etc)
Melt butter in baking pan. Mix flour, sugar, baking powder, salt and milk. Pour batter in pan on top of butter; cover with fruit. Do not stir; batter will rise to top as it bakes and absorbs the flavor of the fruit. Bake at 350 deg

Double Chocolate Coca Cola Cake

Double Chocolate Coca Cola Cake

1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Frosting:
1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar

In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.

Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy!

German Potato Salad

GERMAN POTATO SALAD (submitted by Judy Fluegel-MCCL Cookbook)

1 c. diced bacon2/3 c. sugar
1 c. diced celery2/3 c. vinegar
1 c. chopped onion1-1/3 c. water
3 tsp. salt8 c. cooked potatoes,
½ tsp. pepper   diced or sliced
3 tbsp. flour

Fry bacon; drain and dice.  Return 4 tbsp. bacon fat to skillet; add celery, onions, salt and flour.  Cook gently.  Add sugar, vinegar, pepper and water.  Bring to boil.   Pour over potatoes and bacon in a 3 quart baking dish.  Cover and bake 30 minutes in a 350 degree oven.  
Serves 12.

Strawberry Heaven

INGREDIENTS
SERVINGS 15
1 angel food cake
1 (16 ounce) container Cool Whip
8 ounces cream cheese
1 cup sugar, divided
1 teaspoon vanilla extract
1 quart fresh strawberries, sliced
3 tablespoons cornstarch
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 tablespoon lemon juice
1 cup water
DIRECTIONS
Combine in medium saucepan 1/2 cup of sugar, cornstarch, Jello, lemon juice, and water.
Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
Set aside to cool slightly.
Stir in sliced strawberries.
Tear angel food cake into 1 inch pieces and toss with 2 cups of the Cool Whip.
Press into 9x13 inch pan (I use glass so you can see the pretty layers).
Set aside.
Combine cream cheese, 1/2 cup remaining sugar, and vanilla in mixer bowl.
Beat until smooth.
Stir in remaining Cool Whip.
Spread evenly over cake layer.
Pour cooled strawberry mixture over cream cheese layer, spreading to cover cake evenly.
Refrigerate 2 to 3 hours before serving.
Note: You may substitute a 16 ounce bag of frozen whole strawberries, thawed and chopped, for the fresh strawberries.

BBQ BACON BOMBS

Stop, stop, stop. You had me at “barbecue bacon meatball bombs.” I’m making these bad boys this weekend and I’m going to eat them all before my friends even arrive. Oh, here’s the recipe because I know you want it:
  • 2 yellow onions
  • 1 lb. ground beef
  • 1/4 cup onions, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup mushrooms, chopped
  • 1 Tbsp. brown sugar
  • 1 Tbsp. spicy ketchup
  • 1 tsp. soy sauce
  • 1 tsp. worcestershire sauce
  • 1/4 cup Panko bread crumbs
  • 1 pack of bacon
  • 1 bottle of BBQ sauce

cheesburger Soup

BACON CHEESEBURGER SOUP

Serves 8
Ingredients
  • 1 pound ground beef, cooked and drained of fat
  • 1 (15 oz.) can diced tomatoes, drained
  • 1 (32 oz.) container chicken broth
  • 4 cups potatoes, peeled and cubed
  • 2 cups sharp cheddar cheese, grated
  • 1 cup heavy cream
  • 1/2 cup carrot, chopped
  • 1/2 cup green bell pepper, seeds removed, chopped
  • 1/4 cup all-purpose flour
  • 3 cloves garlic, minced
  • 2 ribs celery, chopped
  • 1 large onion, chopped
  • 1/2 teaspoon chili powder, optional
  • kosher salt and freshly ground pepper, to taste
  • bacon, crumbled optional
Directions
  1. Place ground beef, tomatoes, potatoes, carrot, bell pepper, onion, celery and garlic in your slow cooker and pour chicken stock over the top.
