Starbucks lemon Loaf

STARBUCKS LEMON LOAF
This is a reported to be a Top Secret recipe version of Starbucks Lemon loaf.

Ingredients:
1 1/2 cup(s) FLOUR
1/2 teaspoon(s) BAKING SODA
1/2 teaspoon(s) BAKING POWDER
1/2 teaspoon(s) SALT
3 EGGS
1 cup(s) SUGAR
2 tablespoon(s) BUTTER; Softened.
1 teaspoon(s) VANILLA
1 teaspoon(s) LEMON EXTRACT
1/3 cup(s) LEMON JUICE
1/2 cup(s) OIL
Lemon Icing Ingredients:
1 cup(s) POWDERED SUGAR; Plus 1 Tablespoon.
2 tablespoon(s) WHOLE MILK; I Used 2%.
1/2 teaspoon(s) LEMON EXTRACT
Instructions:
Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.
Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.

Corn Casserole 🌽🌽🌽
Oh my Goodness...I think I have finally made a corn casserole that tops all others. Throw away the Jiffy box and try this, I could eat the whole thing! Love this recipe!!!
Corn Casserole
1 can whole kernel corn, drained
1 can creamed corn
2 eggs beaten
1 stick butter, melted
4 heaping T. all purpose flour
2 T. sugar
1/4 C. diced green pepper (you can use red, I only had green)
1 C. whole milk
1/2 C. shredded cheddar cheese
1/4 tsp each salt and pepper
Combine all ingredients and pour into a greased casserole dish. Bake at 350 degrees for 1 hr. 20 min.

Pecan Pie Cookies

Pecan Pie Cookies
Ingredients:
1 prepared single pie crust (homemade or purchased, I used Pillsbury)
2 tablespoons butter, melted
½ cup pecans, chopped
⅓ cup packed brown sugar
¼ cup corn syrup
2 eggs
⅛ teaspoon salt
optional
¼ cup semi sweet or milk chocolate chip for decorating.
Preheat oven to 400 degrees.
In a large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs.
Cook on the stove top over medium-low heat just until thickened. (You don't want it dry, just slightly thickened, about the consistency of pudding).
Remove from heat and set aside.
Unroll dough and using a 3" cookie cutter, cut out circles.
Gently fold about ⅛-1/4" up on the edges.
Spoon 1 tablespoon of the pecan mixture into each circle.
Place on a parchment lined pan (it's important to line it) and bake 8 minutes or until filling is just set. Remove from oven and cool on a wire rack.
Place chocolate chips in a small Ziploc bag (use brand name, the store brands tend to leak). 
Microwave about 15 seconds or until mostly melted. 
Snip off a tiny corner of the baggie and drizzle chocolate over the cookies. Cool

Ingredients
    for the dough
  • 1 cup milk
  • 5 tablespoons butter
  • 2 eggs
  • 3 1/2 cups bread flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 package active dry yeast (2 1/4 teaspoons)
  • for the filling
  • 2 tablespoons butter, softened
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon
  • 1/3 cup chopped pecans
  • for the topping
  • 1/2 cup butter, melted
  • 2/3 cup brown sugar
  • 1/4 cup corn syrup
  • 1/2 cup chopped pecans (feel free to add more pecans to taste)
Instructions
  1. In the bowl of your mixer, combine 1 cup flour, yeast, sugar and salt. Heat milk to 120 degrees and stir in butter, butter does not have to melt. Using the beater attachment of your mixer, stir in milk to flour mixture until well combined. Add in eggs, one at a time. Gradually add in remaining flour until a soft dough forms. Switch to dough hook or knead by hand for 7-8 minutes. Place dough in a lightly greased bowl, cover loosely with plastic wrap and let rise in a warm location until doubled in size.
  2. Prepare topping. In a small saucepan, combine butter, brown sugar and corn syrup. Heat until just below boiling and all sugar is melted. Pour into a greased 9 x 13 pan. Sprinkle chopped pecans evenly over topping. Set pan aside.
  3. Turn dough out onto a lightly floured surface and roll out into a 18 x 15 inch rectangle. Brush melted butter over entire surface. Combine sugar and cinnamon then sprinkle evenly over dough. Spread pecans in the same manner, coating evenly. Starting on a short side, roll dough, jelly roll style. Pinch seam to secure. Cut dough into 12 even slices approximately 1 1/4 inch thick. Place rolls, cut side down in prepared pan. Cover with plastic wrap and let rise until doubled and spaces between rolls are no longer visible. (at this point you can also place in the refrigerator for baking later) Once rolls are risen, remove plastic wrap and bake in a preheated 350 degree oven for 25-35 minutes, until golden brown.
  4. Remove from oven and let sit for one minute. Cover cooling rack or large tray with foil, then carefully invert rolls onto foil. PLease use caution. CARAMEL IS EXTREMELY HOT AND CAN BURN YOU. Remove pan and let rolls sit for 5 minutes before serving.

BAKED APPLE PIE EGG ROLLS
 
A fun and easy twist on traditional apple pie

Serves: 12-16 egg rolls
INGREDIENTS
  • 2 apples, 1 granny smith and 1 gala (about 2 heaping cups worth)
  • 1 lemon, juiced
  • ⅓ cup sugar
  • 4 Tablespoons flour
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon all spice
  • ⅛ teaspoon salt
  • 16 egg roll wrappers
  • 1 egg, lightly beaten
SWEETENED WHIPPED CREAM DIP
  • ¾ cup heavy whipping cream
  • ¼ cup sugar
  • 2 teaspoons vanilla
  • cinnamon, to sprinkle on top
INSTRUCTIONS
  1. Preheat oven to 375 degrees F
  2. Peel and chop up apples. Put chopped apples in a medium bowl and add remaining filling ingredients to bowl and stir together until well combined. Allow mixture to sit for about 10 minutes.
  3. Place one egg roll wrapper onto a clean surface. Using a clean finger, brush edges of the egg roll wrapper with egg wash.
  4. Spread 2-3 tablespoons of the filling across one side of the prepared egg roll wrapper. You do not want to over stuff these.
  5. Fold the sides over and brush with egg wash. Carefully roll filling tightly in the wrapper and press gently to seal.
  6. Place onto a baking sheet lined with parchment and coat with a thin layer of cooking spray. Repeat until all the filling and wrappers have been used.
  7. Bake egg rolls for 20 to 25 minutes or until golden brown and crisp. During the last 5 minutes of cook time, pull out and brush with a little melted butter and sprinkle cinnamon and sugar on top. Put back in oven for remaining 5 minutes. Serve immediately with sweetened whipped cream.
TO MAKE SWEETENED WHIPPED CREAM:
  1. In a medium mixing bowl, beat cream until it starts to thicken. As the mixture thickens, slowly add sugar until fully incorporated. Add vanilla and whip until stiff peaks form. I sprinkled a little cinnamon on top as well.

Cozy Casserole

Ingredients
1 cup chopped cooked broccoli
1/2 cup diced cooked carrot
6 ounces chopped cooked smoked sausage
2 1/2 cups prepared macaroni and cheese
1 cup shredded colby-monterey jack cheese, divided
1/2-3/4 cup milk
1 teaspoon garlic powder
1/2-3/4 teaspoon ground black pepper
Directions
Preheat oven to 350 degrees.
Spray a 2 quart casserole dish with cooking spray.
In a large bowl mix together broccoli,carrots and smoked sausage.
Then add macaroni and cheese and 4 ounces of colby monterey jack cheese blend,and enough milk to blend all ingredients well.
Then add the garlic powder and black pepper,mixing well.
At this point, taste and adjust your seasonings if desired.
Pour mixture into sprayed dish, and sprinkle remaining co/jack cheese over the top.
Bake at 350 degrees for 35 minutes or until golden brown.

Carrot Cake

CREAM CHEESE STUFFED CARROT CAKE WITH ORANGE GLAZE SAVE ON YOUR TIMELINE FOR LATER ....
INGREDIENTS
2 1/2 cups peeled and grated carrots*
Dry Ingredients
2 cups all purpose flour
1 1/2 cups granulated sugar
1/2 cup light brown sugar, packed
1 cup pecans, finely chopped (I use my food processor)
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon + 1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/4 teaspoon ground nutmeg
Wet ingredients
4 large eggs
3/4 cup vegetable oil
1/2 cup vanilla Greek yogurt (full fat)
1 teaspoon vanilla extract
2 teaspoons orange extract
Cream Cheese Filling
8 oz. cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
3 tablespoons all purpose flour
Orange Cream Cheese Glaze
4 oz. cream cheese, softened
2 tablespoons butter, softened
2 tablespoons orange juice
2 teaspoons lemon juice
1 teaspoon orange extract
1/2 teaspoon vanilla extract
2 cups powdered sugar, sifted
Optional Decorative Garnishes
roasted pecans, roughly chopped
orange zest
INSTRUCTIONS
Preheat the oven to 350F degrees. Butter and flour a 10” bundt cake pan (or use nonstick-spray with flour in it). Set aside.**
To make the Cream Cheese Filling, beat the cream cheese and sugar until light and creamy. Beat in remaining Filling Ingredients until smooth. Set Aside.
In a large bowl, mix all of the Dry Ingredients together. In a separate bowl, gently whisk eggs then stir in remaining Wet Ingredients just until combined. Don't overmix.
Stir Wet Ingredients into Dry Ingredients just until moistened, then stir in carrots until evenly combined (I use my clean hands to stir in the carrots).
Spoon 3 cups batter into prepared bundt cake pan. Spoon Cream Cheese Filling over batter and gently smooth, but do not touch the sides of the pan. Top with remaining batter.
Bake at 350F degrees for 45 minutes, cover with foil then reduce heat to 325 and bake an additional 25-30 minutes or until toothpick inserted near the center comes out clean. Cool in the pan for 10 minutes then transfer to a cooling rack to cool completely.
To make the Orange Cream Cheese Glaze, using an electric mixer, cream together all of the Glaze ingredients EXCEPT the powdered sugar on medium speed for 1-2 minutes or until completely smooth. Add sifted powdered sugar and beat until very smooth, scraping down sides as needed. Place the frosting in the refrigerator for 5 to 10 minutes before using.
When cake has cooled, drizzle Glaze over cake or individual servings, whisking in additional orange juice/milk if Glaze has become too thick upon standing.
Store in the refrigerator for up to 7 days.

*To easily shred carrots, use the grater on your food processor. If you don't have the grater blade, you can also finely chop in your food processor.
**When "flouring" my pan, I use cocoa powder instead of flour because the cake is brown.

Apple Bites

Update:  This recipe has been so popular with my friends and family… everyone loves it!  My friend Melissa made a shortcut using canned fried apples with cinnamon, drizzled them with caramel when they came out of the oven and topped with vanilla ice cream.  I tried this version and it was also DELICIOUS!

APPLE PIE BITES

• Apple Pie Bites -Delicious, quick & easy mini apple pies made with Pillsbury crescent rolls in less than 30 minutes!
Serves: 8 apple pie bites
INGREDIENTS
  • ¼ cup packed light brown sugar
  • 1 teaspoon apple pie spice, and additional apple pie spice for sprinkling on top of crescent rolls
  • 3 tablespoons butter, melted
  • ⅓ cup chopped pecans
  • 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices
  • 1 (8-ounce) can Pillsbury Original crescent rolls
INSTRUCTIONS
  1. Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine brown sugar and apple pie spice. Set aside.
  3. Melt butter and toss apple slices in butter, set aside.
  4. Arrange crescent roll triangles on baking sheet lined with parchment paper. Evenly distribute brown sugar mixture onto each triangle.
  5. Sprinkle each triangle evenly with the chopped pecans.
  6. Place an apple slice on the wide end of each triangle. Wrap crescent roll dough around each apple.
  7. Brush each crescent roll with remaining butter. Sprinkle lightly with additional apple pie spice.
  8. Bake for 10-12 minutes, or until golden brown. Cool for 5 minutes before serving.

Cheese Tots

Borrowed nd Shareing
1 pkg. frozen tater tots (no need to thaw)
1 envelope dry onion soup mix
1 10.5 oz. can cream of chicken soup
1/4 C. milk
1 1/4 C. shredded Colby jack cheese
good pinch of black pepper
Lightly spray a 9x13 inch casserole dish with cooking spray. In a large mixing bowl, combine the dry soup mix, cream of chicken soup, milk and pepper. Stir in the tater tots and the cheese, combine well. Pour into the casserole dish and cover with foil. Bake at 350 degrees for 30 minutes, remove foil and bake an additional 30-40 minutes or until bubbly and golden brown on top.

No Bake Chocolate bars

Worlds Best Chocolate No Bake Bars –
Made with coconut oil & honey instead of sugar!
Ingredients:
1 cup peanut butter
1/2 cup honey
1/2 cup unrefined coconut oil (be sure to use unrefined for the coconut flavor)
2 cups dry oats (not instant)
1 C shredded coconut
1/2 C chopped walnuts (optional)
1 1/4 cups dark chocolate chips
1 t vanilla extract

Cooking procedure:
Melt peanut butter, honey and coconut oil over medium-low heat.
Once melted, remove from heat and add oats, shredded coconut, chocolate chips and vanilla.
Stir until chocolate is entirely melted. Pour into a 9×13 pan and cool in the fridge.
When it’s set, cut into bars and enjoy. Store in the fridge.

The rumored recipe for Neiman Marcus cookies, which was passed around via email for years, and later debunked by the company. These cookies are made with ground oats, chocolate chips, grated chocolate and chopped walnuts.

Ingredients:

2½ cups rolled oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar
2 eggs
1 teaspoon vanilla extract
12 ounces semisweet chocolate chips
4 ounces milk chocolate, grated or finely chopped
1½ cups chopped walnuts

Directions:

1. Preheat oven to 375 degrees F. Line three baking sheets with parchment paper.
2. Blend the oats in a food processor or blender to a fine powder. In a medium bowl, whisk together the blended oats with the flour, baking powder, baking soda and salt; set aside.
3. In the bowl of an electric mixer, cream together the butter and both sugars until light and fluffy, 3-4 minutes. Scrape down the sides of the bowl and beat in the eggs one at a time, beating well after each addition. Beat in the vanilla extract. Reduce the mixer speed to low and gradually add the flour mixture, beating just until incorporated. With a rubber spatula, fold in the chocolate chips, grated chocolate and walnuts.
4. Roll the dough into 2-ounce balls (or about 2 heaping tablespoonfuls worth) and place about 2 inches apart on the baking sheets. Bake one sheet at a time until the edges are set but the center still looks undone, about 10 minutes. Cool the cookies completely on the baking sheets. The cookies can be stored in an airtight container at room temperature for up to 4 days (they can also be frozen for up to 2 months).

Coffee Filters 25 Uses


WOW ! WHO WOULD HAVE EVER THOUGHT OF THIS !!??
COFFEE FILTERS
Coffee filters .... Who knew! And you can buy 1,000 at the Dollar Tree for almost nothing even the large ones. 
1. Cover bowls or dishes when cooking in the microwave. Coffee filters make excellent covers. 
2. Clean windows, mirrors, and chrome... Coffee filters are lint-free so they'll leave windows sparkling.
3. Protect China by separating your good dishes with a coffee filter between each dish.
4. Filter broken cork from wine. If you break the cork when opening a wine bottle, filter the wine through a coffee filter.
5. Protect a cast-iron skillet. Place a coffee filter in the skillet to absorb moisture and prevent rust. 
6. Apply shoe polish. Ball up a lint-free coffee filter. 
7. Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter. 
8. Weigh chopped foods. Place chopped ingredients in a coffee filter on a kitchen scale. 
9. Hold tacos. Coffee filters make convenient wrappers for messy foods.
10. Stop the soil from leaking out of a plant pot. Line a plant pot with a coffee filter to prevent the soil from going through the drainage holes. 
11.. Prevent a Popsicle from dripping. Poke one or two holes as needed in a coffee filter.
12. Do you think we used expensive strips to wax eyebrows? Use strips of coffee filters.. 
13. Put a few in a plate and put your fried bacon, French fries, chicken fingers, etc on them. It soaks out all the grease. 
14. Keep in the bathroom. They make great "razor nick fixers." 
15. As a sewing backing. Use a filter as an easy-to-tear backing for embroidering or appliqueing soft fabrics. 
16. Put baking soda into a coffee filter and insert into shoes or a closet to absorb or prevent odors. 
17. Use them to strain soup stock and to tie fresh herbs in to put in soups and stews. 
18. Use a coffee filter to prevent spilling when you add fluids to your car.
19. Use them as a spoon rest while cooking and clean up small counter spills.
20. Can use to hold dry ingredients when baking or when cutting a piece of fruit or veggies.. Saves on having extra bowls to wash. 
21. Use them to wrap Christmas ornaments for storage. 
22. Use them to remove fingernail polish when out of cotton balls. 
23. Use them to sprout seeds.. Simply dampen the coffee filter, place seeds inside, fold it and place it into a plastic baggie until they sprout. 
24. Use coffee filters as blotting paper for pressed flowers. Place the flowers between two coffee filters and put the coffee filters in phone book.. 
25. Use as a disposable "snack bowl" for popcorn, chips, etc.

Homemade Egg Noodles
2 cups flour (all purpose)
1/4 teaspoon salt
2 medium eggs
1/4 cup water
In a large bowl combine the flour and salt. Make a hole in the flour, like a well. Crack the eggs into the hole. Using you hands or large spoon mash the eggs and flour together making a coarse and crumbly mixture. Add the water. Mix again until you have a nice, stiff dough. Knead the dough a few minutes to get it nice and smooth (5-10 min.) You may need to dust it with a little flour to keep it from sticking to your hands. When you are satisfied with your ball of noodle dough cover it with a tea towel and let it rest for about 20 minutes. This is to relax the gluten in the dough, making it easier to roll out.
Use a rolling pin and a floured surface roll dough out real thin, as the noodles will poof out when they cook. Cut into strips or the the shape you want. Let the noodles rest and dry for about 20-30 min if you can. Cook in a broth that's boiling and then reduce to simmer for 25-30 minutes.

  • 1 (9-inch) Pie Crust Recipe, unbaked
  • 3 eggs
  • 1¼ cups granulated sugar
  • 2 tablespoons all-purpose flour
  • ½ cup butter, melted
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • pinch of salt
INSTRUCTIONS
  1. Preheat oven to 350ΒΊ F.
  2. Mix together eggs, granulated sugar, flour, butter, buttermilk, vanilla, lemon juice, lemon zest, and salt until well-combined. Pour into the unbaked pie crust and bake for 45-50 minutes until set and golden brown.
  3. Remove from the oven and allow to cool prior to slicing.
  4. Store in the refrigerator.
