Pop corn in a microwave

Microwave popcorn, no bags, no butter, no oil!!!!
It’s genius really. Simple, simple genius.
Glass bowl + ceramic plate + popcorn kernels = perfectly popped popcorn in the microwave.
No bag. No butter or oil. Nothing to throw away afterward. And even no un-popped kernels.
This is life-changing.
Take 1/4 cup of dry popcorn kernels and place in the bottom of a microwave-safe glass bowl (pyrex is a great choice). Place a microwave-safe plate on top of the bowl. Plate should be wide enough to go beyond the rim of the bowl.
Microwave for 2 minutes 45 seconds. (might need to do for a shorter time if you have a powerful microwave) Watch in glory as your popcorn pops perfectly into little puffs of heaven.

Califlower Fried Rice

Cauliflower Fried Rice

Looks and tastes exactly like fried rice! But so much healthier for you! Tastes amazing plain, or would also be great with some ham, chicken or meat added!
INGREDIENTS
  • 1 head of cauliflower, (about 2½ cups chopped in a food processor)
  • 2 Tbs sesame oil
  • 1 small white onion, chopped
  • 1 cup frozen peas and carrots, thawed
  • 2-3 Tablespoons soy sauce (more or less to taste)
  • 2 eggs, lightly beaten
  • 2 Tbsp chopped green onions (optional)
INSTRUCTIONS
  1. Rinse and chop the cauliflower into florets and put into a food processor. (If you don't have a food processor continue to chop the cauliflower into tiny pieces.) Pulse until the cauliflower until it is small and resembles rice.
  2. Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion and peas and carrots and fry until tender.
  3. Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  4. Add the cauliflower to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and cauliflower is tender. Add chopped green onions if desired.

mac &CHEESE


Sweetie Pie’s Macaroni & Cheese (serves 12-24)
Ingredients:
1 pound elbow macaroni
1 cup whole milk
2 12-ounce cans evaporated milk
3 eggs
1 cup butter, cut into small pieces
½ pound Colby cheese, grated
½ pound Monterey Jack cheese, grated
½ pound sharp Cheddar cheese, grated
1 pound Velveeta cheese, cut into small chunks
½ cup sour cream
Salt, to taste
1 TB white pepper
1 TB sugar
1 cup grated mild Cheddar cheese for the topping
Instructions:
Heat oven to 350° F. Prepare a deep sided 9×13 pan by coating with cooking spray. Set aside.
Bring a large pot of water to a boil. Add salt, and cook elbow macaroni according to package directions until tender. Drain and transfer the macaroni noodles to the baking pan.
While the macaroni is cooking, combine the milks and eggs in a large bowl. Whisk until thoroughly combined. Add the butter, cheeses, sour cream, salt, pepper, and sugar and stir to combine. Pour over the macaroni and stir to combine. Top with the grated mild Cheddar cheese.
Bake for 30 to 45 minutes or until the top is lightly golden brown

Deviled Avacados Eggs

Deviled Avocado Eggs – Where have these been my whole life??
Mash 1 large avocado with 3 egg yolks. Add 1 tsp. cilantro, 3 tsp lime juice, 1 tbsp red onion, and a pinch of salt and pepper. Top with a sprinkle of chili or paprika.

Sweater Care


So many of you have asked me to repeat my SWEATER information so today is the day! I want to share with you some easy ways to keep them clean, fresh and new looking and also how to take the itch out of wool sweaters.
CASHMERE:
Cashmere should be cared for as you would care for your hair. Hand wash it in cool water with a good squirt of shampoo. Gently squeeze the suds through it and then squeeze it out but don’t wring. Put into a rinse of cool water and again squeeze it rather than wringing. Do a second rinse of clear cool water. Gently squeeze out the water you can and then roll in a towel to remove as much water as you can. Reshape and dry flat out of the sunlight. 
BLENDS: 
These are sweaters with cotton, polyester and other fibers. If they say “washable” on the care label here is what to do. Turn them inside out and wash in cool water on a gentle cycle in the washer. Dry as indicted on the care tag. If you put them in the dryer, leave them wrong side out until you fold them.
EMBELLISHED:
Sweaters that are washable with beading, sequins, etc. on them need special care. Always hand wash these and if you have a “hand wash” feature on your washing machine, put the sweater, turned to the wrong side, in a delicate or lingerie bag. Use a gentle detergent and a liquid fabric softener. Dry according to directions. 
KEEPING WOOL ITICH-FREE:
Many times sweaters containing wool can be itchy when it comes into contact with skin. To eliminate this issue wash as directed on the care label but use a rinse containing a few tablespoons of glycerin. Find glycerin in the hand cream section at the drug store. This will keep the garment soft and prevent itching.
FRESHENING SWEATERS:
If you want to freshen a sweater without washing or taking it to the dry cleaner, try Dryel. It is used in the clothes dryer to freshen the sweater. It is not an actual cleaner or stain remover, but it will help you get more wear out of clothes. Use according to directions and buy at places like Frys, Walgreens and Target.

Garlic rubbed roasted cabbage



Garlic Rubbed Roasted Cabbage Steaks
If you love cabbage, you are going to freak out about how good this is. Now, if you are on the fence about cabbage, you need to try this because this might be the recipe that converts you to a cabbage lover.

This is a simple side dish worthy of a dinner party and couldn’t be easier to make. Four ingredients, a couple of minutes to prepare and toss in the oven for an hour.
Ingredients
1 (approx 2lb) head of organic green cabbage, cut into 1″ thick slices
1.5 tablespoons olive oil
2 to 3 large garlic cloves, smashed
kosher salt
freshly ground black pepper
spray olive oil OR non-stick cooking spray
Instructions:
1. Preheat oven to 400F and spray a baking sheet with non-stick cooking spray. Pull outer leaf off cabbage (it’s usually dirty and nasty looking), cut cabbage from top to bottom (bottom being root) into 1″ thick slices.
2. Rub both sides of cabbage with smashed garlic.
3. Use a pastry brush to evenly spread the olive oil over both sides of the cabbage slices.
4. Finally, sprinkle each side with a bit of kosher salt and freshly cracked black pepper.
5. Roast on the middle rack for 30 minutes. Carefully flip the cabbage steaks and roast for an additional 30 minutes until edges are brown and crispy.
